Oven-Roast Potatoes and Veggies

Oven-roast potatoes combined with veggies is a very easy recipe to make. It is a more healthy alternative to French fries and can be served along side grilled fish or even steak. Different people prepare theirs differently but here is my style.



350g Potatoes

5 medium Carrots

1 Egg plant (this can be left out if you choose)

1 green/red bell Pepper

1 medium Onions

Half clove of Garlic

2 baby Leeks

Cherry Tomatoes (Whole)

½ teaspoon Parsley

½ teaspoon Oregano

½ teaspoon Majoram

1 teaspoon freshly ground black pepper

2 tables spoon Olive oil

Salt to taste


1. Preheat oven to 425 degrees F.
2. Cut potatoes with skin and other vegetables into bite sizes; leave tomatoes whole. Crush garlic with knife, peel the outter skin leaving on the inner one.
3. Add potatoes, garlic and other vegetables to a large mixing bowl with the rest of the ingredients – Oil, Oregano, Black pepper, Marjoram, Parsley and Salt. Toss meticulously to coat the potatoes evenly.


3. Line a baking tray with foil. Evenly spread the potatoes and vegetable mix, so they cook uniformly.

4. Bake for 35 minutes, or until well browned, cripsy on the outside, and tender within. Tip: During cooking toss mix at intervals to ensure even cooking.

5. When done, serve immediately in a star dish…lol…or alternatively you can eat straight off the baking pan *kidding*. Sprinkle with more salt if desired.
