5 medium Carrots
1 Egg plant (this can be left out if you choose)
1 green/red bell Pepper
1 medium Onions
Half clove of Garlic
2 baby Leeks
Cherry Tomatoes (Whole)
½ teaspoon Parsley
½ teaspoon Oregano
½ teaspoon Majoram
1 teaspoon freshly ground black pepper
2 tables spoon Olive oil
Salt to taste
3. Line a baking tray with foil. Evenly spread the potatoes and vegetable mix, so they cook uniformly.
4. Bake for 35 minutes, or until well browned, cripsy on the outside, and tender within. Tip: During cooking toss mix at intervals to ensure even cooking.
5. When done, serve immediately in a star dish…lol…or alternatively you can eat straight off the baking pan *kidding*. Sprinkle with more salt if desired.
